Haggis and a full Scottish Breakfast

I thought haggis was somewhat of a joke like liver and onions. I was wrong. Haggis is on almost every menu including the full Scottish Breakfast. The core of the Scottish breakfast is protein and I assume this was the biggest meal of the day, back in the day. Sausage, Haggis and Black Pudding are all ways to use the tough, bad-tasting elements of livestock. Grind the ‘stuff’ for ease of cooking, mix it with a grain filler and spices for flavor, and store it in a tube. American’s have hot dogs, the Germans have Bratwurst, the French have Pate and the Scots have Haggis. 

The recipe for Haggis minces the liver, heart, and lungs of a sheep and then that is mixed with beef or mutton suet and oatmeal and seasoned with onion, cayenne pepper, and other spices. The mixture is packed into a sheep’s stomach and boiled. Mmmm. Black pudding is similar to the Irish Blood Sausage, with pork and pork blood as the primary ingredient for even more iron. 

When done well, haggis is surprisingly good. I actually liked and soon looked forward to eating haggis for breakfast. 

Traditional Scottish Breakfast

The traditional Scottish breakfast consists of a patty of haggis, a patty of black pudding, a link or two of sausage, a slice or two of ham, eggs done any style, a Scottish scone, a small baked tomato to fight off scurvy, and baked beans. We found a few variations but that’s the standard plate. The best breakfast we found was at the Lockindaal Hotel in Port Charlette.

I’m 6’ tall, 200lbs and “I loves my breakfast,” but this was always too much food for me. I usually passed off my sausage or eggs, the least exciting items. One day we found a small breakfast on the menu which contained smaller portions of everything while eliminating the haggis and black pudding – that will not do. We never ordered that option again. 

We had haggis at night as well on most days. Haggis bon-bons, haggis lolli-pops, and twice in Campbeltown we had haggis nachos. Just the sound of that, haggis nachos, brings a smile to my face. And when I say haggis was on every menu and always good, that includes the breakfast at the airport. Don’t be shy if you have time in the Glasgow Airport, the Scottish breakfast is worth it.
